Dominio do Bibei “A Return to the Past”

Dominio do Bibei was founded in 2000 by Javier Dominguez brother of fashion designer Adolfo Dominquez , the wines are supervised by the famous Priorat tamdem -Sara Peréz (daughter of José Luis Peréz, Mas Martinet) and René Barbier Junior ( son of Clos Mogador´s founder). 2005 was the first vintage released by Javier and his team.
Dominio de Bibei based on the western part of the Ourense province, is an ambitious project based on ancestral farming, looking to express the terroir of the Ribeira Sacra through a natural winemaking approach.
Vinification is achieved in different sized wood and concrete and natural yeasts are used. Reds are made mainly from Mencía, Garnacha Tintorera, Brancellao and Mouraton (the latter two being local varieties unique to the region) and whites come from Godello plus a bit of Doña Blanca and Albarino which cuttings came from famous producer Do Ferreiro.

Best White Value Barrel Aged “Lapola” – Godello (70%) Albariño (20%) and Doña Blanca (10%) Aged for 15 months on its lees (15% in concrete eggs shaped vats ) and 7 months in french oak and 1200L Foudres. Has not undergone malolactic fermentation. Ready to Drink 2010 Vintage.
Top White Wine Barrel Aged “Lapena” – Godello 100% Alcoholic fermentation in French oak barrels and aged on its lees for 15 months. Subsequently, it remains in egg-shaped concrete wine vats for 4 months and in bottle for 18 months. It has not undergone malolactic fermentation. Ready to Drink 2008 Vintage.
Best Red Value Barrel Aged “Lalama”- Blend of mainly Mencia complemented by Garnacha Tintorera, Mouraton and Brancellao Aged on its lees for 20 months in French oak barrels, and subsequently in bottle for a further 18 months. Bottled without filtration decanting. Bottled without filtration decanting is recommended. Ready to Drink 2010 Vintage.
Top Red Wine Barrel Aged “Lacima” – Mencia 100 % from three vineyards of 50-90 years old, Aged on its lees for 20 months in French oak barrels, and subsequently in bottle for a further 18 months. Bottled without filtration decanting is recommended. Ready to Drink 2008 Vintage.
Superior Red Barrel Aged “Dominio de Bibei B” – Pure Brancellao red wine Aged on its lees for 18 months in French oak barrels, and subsequently in bottle for a further 28 month. Limited production of 500 bottles Bottled without filtration decanting is recommended. Ready to Drink 2008 Vintage.
Superior Red Barrel Aged “Dominio de Bibei MT” – 100% Mouratón and fermented with indigenous yeast in open 500L barrels. Malolactic fermentation in 300L barrels. Aged for 18 months in old French oak barrels. Bottled without filtration decanting is recommended. Ready to Drink 2006 Vintage.
